Chocolate Brownies for Artists

We are introducing a new aspect to the blog that so many of our students enjoy when they are here for courses – Don’s food.  A constant presence at the Gail Harker Creative Studies Center, Don Harker loves to cook, and he frequently brings in yummy things to share with the students.  First up, his brownies, which are a perennial favorite.  He is frequently asked for the recipe, so here it is.  I hope you are sitting down, because it is quite a surprise!


Don’s Creative Studies Center Brownies

Surprise, surprise, these brownies start with a package brownie mix.  I have tried several brands, but the only one that works for me is the Ghirardelli Triple or Double Brownie mix (I buy them in six-mix boxes at Costco).

Follow the instructions on the box.  It calls for 1 egg, 1/3 cup water, and 1/3 cup of oil.  I always use peanut oil – do not use olive oil nor any other strong-flavored oil.

After mixing the supplied ingredients as directed, stir in 1 cup coarsely chopped pecans, 1 cup dark chocolate chips, and one cup of mini marshmallows.

For easy release of brownies from the pan, coat the bottom and sides with soft butter, take a piece of baking parchment cut to the size of the pan and place in the bottom.  Grease the parchment paper with soft butter and spread the mix evenly in the pan.  Bake as directed on the package.

    MMMMMmmmmm….! I remember Don’s baking from my time there in 2007. It’s why you have to stay a brisk walk away from the studio — so you can counteract the calories!

    Don treated the Level 2 class in Design and Experimental Hand & Machine Embroidery to a wonderful Tart Tatin with creme fraiche. He brought it in on Mother’s Day and it was a wonderful treat at our morning break. Thank you Don for taking such good care of us!
